Degradation two of the major components of the calcium regulating system in skeletal muscle is associated with differences in pH decline and drip loss. This study indicates that there may be heretofore unobserved differences in these proteins and/or their associated regulatory proteins. This study provides critical evidence that may lead to producing pigs that will more consistently produce high quality pork.
